Apple Date Pudding
Total Cooktime: 3-4 hours
What you will need:
* 4-5 apples, peeled, cored and diced
* 3/4 cup sugar, or less, to taste
* 1/2 cup chopped dates
* 1/2 cup toasted, chopped pecans
* 2 tbs. flour
* 1 tsp. baking powder
* 1/8 tsp. salt
* 1/4 tsp. nutmeg
* 2 tbs. melted butter
* 1 egg, beaten

In the slow cooker, place apples, sugar, dates and pecans; stir. In a separate bowl, mix together flour, baking powder, salt and nutmeg and stir into apple mixture. Drizzle melted butter over batter and stir. Stir in egg. Set cooker on low and cook for 3 to 4 hours. Serve warm.
If your family prefers crispier nuts, add toasted pecans instead at the end of the cooking period. You can serve this with ice cream or whipped cream.
Diabeticly Friendly Version: If you want to make this recipe a little more diabetically friendly you could substitute the following:
- Choose Splenda over sugar
- Choose Egg Beaters over a whole egg
- Choose margarine instead of butter
