CROCKPOT CABBAGE CHILI SOUP

Delicious cabbage chili soup!  Okay, this may not sound like these two things go together but trust me, they do! The taste is really awesome!

One thing I really liked about this recipe is that it was ridiculously easy ~ something that I love! Simply throw it all in your crockpot, set it and forget it!

In order to make this recipe even EASIER you can buy pre-chopped onions in your freezer section. God knows I hate chopping onions ~ this is why I got married :)

So...without further adieu...



Cabbage Chili Soup
Total Cooktime: 6-8 hours


What you will need:

3 cups coarsely chopped cabbage

1 cup chopped onions
3 cups Healthy Choice tomato juice (or any reduced-sodium)
1 (10-1/2 oz) can Healthy Request Tomato Soup
10 oz kidney beans, rinsed and drained
2 tsp chili seasoning mix



Simply combine all the ingredients in your crockpot and mix well to combine. Pop on the lid and cook on LOW for 6-8 hours and POOF...a soup that is perfect for dieters, diabetics and heart healthy diets! It's also perfect for lent because this is a 100% meat free meal.

Asparagus Casserole

Asparagus Casserole
Total Cooktime: 4-6 hours


What you will need:


2 cans sliced asparagus, (10 oz each)
1 can cream of celery soup, (10 oz)
2 hard cooked eggs, thinly sliced
1 cup grated cheddar cheese
1/2 cup coarsely crushed saltines or Ritz crackers
1 teaspoon butter


Place drained asparagus in lightly buttered slow cooker/Crock Pot or slow cooker/Crock Pot baking
insert. Combine soup and cheese. Top asparagus with sliced eggs, soup mixture, then the cracker
crumbs. Dot with butter. Cover and cook on low for 4 to 6 hours.

Crockpot Artichokes

Okay, before I get to the recipe..It's time for an Artichoke joke :)

A hitman named Artie walked into a Dominick's grocery-store and took out 3 rival mob members. After he was apprehended someone asked him why he did it. He said he was paid a dollar to rub these three people out.

What do you think the newspaper read the next day? 

Artichokes 3 for a dollar at Dominick's!

Corny yes? Funny, no, unless you grew up in my house :)

Crockpot Artie Chokes :)

Total Cooktime: 4-5 hours


What you will need:


5 artichokes, remove stalks and tough leaves
1 1/2 ts salt
8 peppercorns
2 stalks celery, cut up
1/2 lemon, sliced
2 c boiling water

Nothing difficult here...combine all the ingredients and cook on High 4 - 5 hours.

Best Crockpot Recipes ~ Homemade Creamy Corn

This homemade creamy corn recipe makes the ideal side dish.  Not only is it tasty but it is fast too! What I really liked about this recipe (besides the taste) was the fact that it is one of the fastest crockpot recipes I've ever come across. 1 Hour from start to finish.

This will leave you plenty of time to cook your main dish and serve everything to your table piping hot!


Homemade Creamy Corn

Total Cooktime: 1 hour


What you will need:


  • 2 cups corn
  • 2 tablespoons sugar
  • 2 eggs
  • 1/4 cup flour
  • 2 tablespoons butter
  • 1 cup milk
  • 1/2 teaspoon salt
Ready for the easiest recipe ever? Mix corn, sugar, eggs, flour, butter, milk and salt; place in slow cooker. Cook on high for one hour. That's it!  1 hour to your own homemade cream corn.

Best Crockpot Recipes ~ Broccoli Soup

If you love broccoli you will love this cheesy version of broccoli soup!

This time of year with Spring just around the corner it is the perfect time for a large batch of homemade soup. This recipe is fully of cheesy goodness and really can warm up even the chilliest of nights. You can use frozen broccoli or feel free to use fresh broccoli too.

This one is not a good freezer so make only as much as you need.


Broccoli Soup

Total Cooktime: 2 hours


What you will need:

  • 4 c. water
  • 4 chicken bouillon cubes
  • 1/4 c. chopped onion
  • 2 c. diced potatoes
  • 1 bag frozen, chopped broccoli
  • 2 cans cream of chicken soup
  • 1/2-1 lb. Velveeta cheese, cubed
Mix water, bouillon cubes, onions, potatoes and broccoli in a crock pot. Cook on
high until broccoli is thawed. Add cream of chicken soup and cheese, to taste, to
mixture. Turn crock pot on low and cook for 2 hours.

Best Crockpot Recipes ~ Aztec Black Beans

This crockpot black bean recipe sounds absolutely yummy!  I've never heard of turtle beans before but I'm going to head to our local Trader Joes and look for them. If you've ever tried them - I'd love to hear what your thoughts are!  I also like that there are only 2 ingredients to this dish which makes it a good one for us budget conscious moms.

You will need to soak the beans overnight so keep this in mind when you plan to make this recipe. This is also a long cooker (8-10 hours) so I'd start cooking this before you head out to work in the morning and by the time you get home you will have a delicious batch of black beans!  Wow...that's a LOT of B's!

This would be the perfect side dish to go with your taco or burrito night!

Aztec Black Beans
Total Cooktime: 8-10 hours


What you will need:

1 lb. dried black beans (or turtle beans)
16 oz. jar of salsa (your favorite kind)

Rinse your beans to remove any stones or foreign objects.  Put the beans into a shallow bowl and cover with water. Soak the beans overnight.

In the morning drain the beans and place into your crockpot with the salsa. Add just enough water to cover the beans. Cover and cook for 8-10 hours on low.

Best Crockpot Recipes ~ Zucchini Casserole

If you are a veggie lover then this crockpot zucchini casserole is for you!


My sister was born with a green thumb. Every year she grows the most amazing zucchini and tomatoes in her backyard and I get the benefits of her hard work (thanks Lin!). Freshly picked zucchini and tomatoes in this crockpot recipe are divine!

If you have a brown thumb (like me) you can get these fresh from your supermarket or from fresh vegetable growers who sell to the general public. 

This would be be good at any time of year but especially during the summer months when vegetables are fresh.



Zucchini Casserole Crock Pot Recipe

Total Cooktime: 4 1/2 hours
Serves: 6

What you will need:

1 red onion, sliced
1 green pepper, cut in thin strips
4 med. zucchini, sliced & unpeeled
1 (16 oz.) can diced tomatoes, undrained
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. basil
1 tbsp. butter
1/4 c. freshly grated Parmesan cheese

Combine all of the ingredients into your crockpot or slow cooker except the butter and cheese. Set your crockpot temperature to low and cook for approximately 3 hours covered. After 3 hours is up dot the casserole with the butter and sprinkle the freshly grated parmesan cheese over the top and cook covered for an additional 1 1/2 hours on low. 

This zucchini casserole recipe can be eaten alone or try serving it over spaghetti noodles for a complete meal. I would also save some extra parmesan cheese to sprinkle over the top just before serving. Also, some people are not crazy about eating unpeeled zucchini. Then go ahead and peel your zucchini before you slice it. It won't harm the recipe.

Make it Healthy:  To make this recipe more healthy you can use fresh tomatoes instead of canned ones for a really amazingly fresh taste. You can also substitute margarine for the butter. As for the parmesan cheese, you can cut this down (or out for that matter) if you wish but it really helps pull everything together.
